Awesome Chimichangas that I made last night! These were sooooo delicious! So I thought I would share the recipe with the rest of you! Hope you enjoy!!
Chimichangas: Quick and Easy Dinner Recipe
Ingredients:
- 4 Cups Shredded Chicken (Seasoned with Salt and Pepper)
- 2/4 Cup Green Onion
- 1 Tomato
- 2 Cups Salsa
- 2 Tsp Cumin
- 1 Tsp Oregano
- 2 Tsp Melted Butter
- 2 Cups Cheese
- 6 XL Tortillas
Toppings:
- Cheese
- Sour Cream
- Guacamole
- Salsa
- Green Onions
- Hot Sauce
- Diced Tomatoes
Directions:
- Preheat oven to 400 degrees.
- Season and cook chicken, then cut it up to shred it. I used three chicken breasts, and it yielded 4 cups of shredded chicken.
- Mix together chicken, green onion, salsa, cumin, oregano, and cheese in a large mixing bowl.
- Place the mixture in the middle of the tortilla- I would do anywhere from 4-6 spoonful’s- then wrap the tortilla. Grab one end of the tortilla and wrap it around the mixture, and then fold in the edges and flip the tortilla so that the open edge is on the bottom.
- Place the folded Chimichanga in a lightly greased baking dish.
- Repeat steps 3 & 4. This should yield 6 total Chimichangas.
- Brush butter onto the tops of the Chimichangas and place in the oven for 20-25 minutes or until lightly brown and crispy.
- Top your Chimichangas with desired toppings of cheese, sour cream, guacamole, salsa, green onions, hot sauce, or diced tomatoes.
- Time to Enjoy!
Overall, the dinner was quick and easy to make. It took me about 25 minutes to prep and then I had to wait for them to bake. Everyone enjoyed it and I had leftovers for lunch! A win-win situation for any weekday dinner if you ask me!
